8 chicken tenderloins or 4 chicken breasts
1 (8 oz) pkg. of cream cheese
1 can of black beans, rinsed
1 can of Rotel
1 can of corn, drained
Put frozen chicken in the crock pot. Put cream cheese on top of the chicken. Dump in the Black Beans (make sure they are drained and rinsed). Dump in the drained corn. Dump in the Rotel. Cover and cook in your crock pot on low for 6 hours. Every 2 hours stir. Shred the chicken when it's done. It's a little soupy, but letting it sit causes it to not be as soupy. Serve over rice.
Optional sides: cheese, lettuce, salsa, olives... lots of options! Another option is to make this into a burrito with a tortilla.
Note: This makes a lot! At least 6-8 adults. Makes great leftovers.
