3/4 c chopped onion
2 Tbsp margarine or oil
1 & 1/2 lbs ground beef
2 Tbsp soy sauce
2 Tbsp brown sugar
1 - 4 oz can mushrooms, drained
1 - 10 oz can Cream of Chicken Soup
1 & 1/2 c cooked rice (probably more)
1 - 8 oz can of water chestnuts (optional)
Corn & olves are also optional.
Cut off pumpkin top & clean out all the seeds & stringy pulp. Use a black marking pen to draw jack-o-lantern face on pumpkin. Saute onions in margarine in large skillet. Add meat & brown. Drain grease. Add soy sauce, sugar, mushrooms, and soup (& optional items). Simmer, stirring occasionally for 8-10 minutes. Add cooked rice and simmer additional 5 minutes.
Pour mixture into pumpkin and replace pumpkin top. Place filled pumpkin on a baking sheet and bake in oven at 350 degrees for 1 hour. The pumpkin itself should be tender when removed from oven.
