Crock Pot Mexican Dip

1 & 1/2 lbs ground beef
1 c chopped onion
1 pkg Spanish rice
1 can refried beans
1 - 10 oz can enchilada sauce
1 lb cheddar cheese, cubed
1 pkg tortilla chip scoops











In a large roasting pan, cook the beef and onion; drain.  Prepare rice as directed.  Combine rest of ingredients.  Cover & cook on LOW for 1 & 1/2 - 2 hours or until cheese is melted.  Serve with tortilla scoops.
Optional sides to include with this meal; sour cream, tomatoes, olives, lettuce, and guacamole.
