B's Roast

1 beef roast (your choice of cut)
red potatoes
1/2 onion
carrots (either baby or cut up regular)
1 package of Lipton Onion Soup Mix


Depending on how many people you're serving your portions will change.  Cut the potatoes in half, and cut the carrots if you have the regular size.  Cut the onion in a few wedges.  Put the meat in the pot roast first, then sprinkle most of the soup mix (dry) on the meat, along with salt and pepper.  Next add the carrots, potatoes, and onions mixed together on top.  Sprinkle the remaining soup mix on top of the veggies.  Cover and cook on low for 4 hours, then turn up to high for 1 to 1 & 1/2 hours, or until done.


Leftover Stew:
When I'm making this for a small crowd and know I'll have leftovers I make sure to add plenty of potatoes and carrots so I can make a stew out of the leftovers.  To do that, cut up the leftovers in bite-sized pieces, put them in a large pot, add two cans of golden mushroom soup, two cans of water, and heat.  Yum!
