Yams & Apples

1. Yams - Approximately 3 large, depending on size, enough to fill half of a 9 X 13 pan when sliced (but don't slice them first).  Boil until firm tender, not mushy (10-15 min).  Cool.  Peel and slice 1/3 - 1/2 inch thick.

2. Granny Smith Apples - approximately 4-5 large, enough to fill 1/2 of a 9 X 13 pan when sliced.  I prefer the larger apples, cored, peeled (optional), and sliced 1/3 inch thick.

3. Sauce - 1 & 1/2 c water, 1 c sugar (or apple juice concentrate), 1 cube of butter, cornstarch to thicken (about 2-3 Tbsp).  Combine ingredients and boil until clear.  Layer yams & apples in lightly sprayed casserole dish.  Cover with sauce and bake at 350 degrees until apples are tender (about 45 minutes).
