For two pies or one 9 x 13 pan
2 graham cracker pie crusts or crumb crust in 9 x 13 pan
2 graham cracker pie crusts or crumb crust in 9 x 13 pan
3 eight oz. package cream cheese (don't use low fat)
2 cans sweetened condensed milk
2/3 cup lemon juice concentrate or fresh lemon juice (extra good)
2 tsp vanilla
Mix softened cream cheese together beating until smooth
Add sweetened condensed milk slowly, beating as you add it
Add lemon juice and vanilla (lemon juice causes the thickening, so don't scrimp)
Beat until smooth and completely mixed
Pour over crust and refrigerate.
