Belgium Onion Soup

1 cube of butter
2 lbs yellow onion
4 celery stalks, diced
7 large potatoes, cubed
10 c water, seasoned to taste


In heavy saucepan melt butter and onion.  Brown, stirring often.
Boil onion, celery, and potatoes for 60 minutes, or until mushy.  Crush or mash vegetables into thick liquid.  Bring to boil for 2 minutes

Serve hot with grated Swiss Cheese sprinkled on top, and a side of french bread to dip into the soup.
